Pumpkin Peanut Butter Truffles

Fall brings on the seasonal pumpkin trend. Aside from pumpkin spice lattes and pumpkin pie, there are so many creative ways to enjoy this iconic fall food. And today’s recipe is one more.

The Perks of Pumpkin

This may surprise you, but this gourd is an extremely healthy vegetable, full of nutrition and health benefits. For starters, pumpkin can aid in weight loss because of a) its high fiber content, which makes you feel satiated, and b) its low carbohydrate count from its high water content. Pumpkin also has a high beta-carotene content, which can help improve your vision and eye health. It also rejuvenates the skin and can make you look younger. Appropriate for the cold weather and flu season, it’s content of vitamin A and C can improve your immunity.

In addition, pumpkin can be cooked in a myriad of different ways, and it’s delicious and nutritious in every one!

For this recipe, I combined the sweet taste of pumpkin with two of my other favorite foods: chocolate and peanut butter. These truffles can satisfy your sweet tooth and the fall craze while still being a healthy snack.

For the best results, use dark chocolate that is at least 72% cocoa. This is the recommended percent to maximize the health benefits of chocolate, which includes magnesium, iron, and antioxidants. I use natural peanut butter to avoid the added fats and sugars in mainstream brands. The consistency between the two types of peanuts vary greatly and won’t work well as a substitute in this recipe. The use of coconut flour omit any grains in this recipe, making it naturally gluten-free.

These truffles are a sweet comfort food with fewer carbs and sugar, and more fiber and antioxidants.

Pumpkin Peanut Butter Truffles | The Creative Palate

Pumpkin Peanut Butter Truffles

Ingredients:

  • ¾ cup pumpkin puree
  • ½ cup natural peanut butter
  • 3 tbsp honey
  • 1 tbsp coconut oil, melted
  • ¼ cup coconut flour
  • ¼ tsp cinnamon
  • Pinch of salt
  • 1 cup dark chocolate, melted

Directions:

  1. Mix the pumpkin puree, peanut butter, honey, and coconut oil in a blender or by hand.
  2. Incorporate the flour, cinnamon, and salt into the pumpkin mixture until well-combined. If the batter is too sticky to handle, add some more coconut flour.
  3. Roll the pumpkin batter into tablespoon-sized balls and refrigerate for thirty minutes.
  4. Using a toothpick or a fork, roll the balls into the melted chocolate until they are fully coated. Alternatively, drizzle or pour the chocolate over the balls.
  5. Refrigerate the truffles for about ten minutes until the chocolate hardens.
  6. Store the truffles in the refrigerator for up to two weeks. For crunchier, longer-lasting truffles, keep them in the freezer and defrost a few minutes before eating.
