I have an affinity for inspirational quotes. Several favorites are printed and nailed to my the wall across my desk. Whenever the work gets rough, it’s always helpful to have a reminder of what you are doing it all for.

Grain-Free Lemon Bars
Ingredients:
- Crust:
- 1/2 cup almond flour
- 1/2 cup tapioca flour
- 3 tbsp honey
- 2 tbsp melted coconut oil
- 1 tsp orange zest
- Filling:
- 5 eggs
- 1 full lemon (rind included)
- 3 tbsp tapioca flour
- 1/2 cup honey
Directions:
- Preheat the oven to 350 degrees.
- Prepare the crust by mixing the ingredients and pressing it onto the bottom of a lined 9×9 pan.
- Bake for 10-12 minutes until golden, and allow to cool for 20 minutes.
- Prepare the filling by pulsing the lemon in the food processor then adding the honey, lemon, and eggs. Blend until smooth and there are no lemon chunks.
- Pour over the crust and bake for about 25 minutes until set. (The middle might still be jiggly but that’s okay; it will firm up when cold.) You don’t want a brown crust over the filling because that will ruin the tart flavor.
- Refrigerate for 4 hours or until set, and enjoy!
