Healthier Chocolate Chip Cookies

This recipe comes as a request and it was long overdue. Chocolate chip cookies are a classic, the kind of food that reminds you of fuzzy and happy things. With all of the depressing things happening nowadays, it’s time to spread a little positivity.

Healthier Chocolate Chip Cookies

Ingredients:

  • 1/3 cup melted coconut oil
  • 1/2 cup honey
  • 1 1/2 cups gluten-free oat flour
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 cup 72% dark chocolate chips

Directions:

  1. Preheat the oven to 350 degrees.
  2. Mix the coconut oil, honey, vanilla, and egg in a large bowl.
  3. Combine the flour and baking soda and slowly blend with the wet ingredients until well combined.
  4. Stir in the chocolate chips.
  5. Spoon the cookie dough by the tablespoon onto a lined baking sheet.
  6. Bake for 8-10 minutes.
  7. The cookies will harden as they cool.

    These were awesome!!!! i put them in the freezer and they taste like cold cookie dough 🙂 also, you didn’t specify whether the coconut oil should be melted or solid, so i used solid, and they turned out incredible. i would definitely make them again.
