Everyone has their ‘fixes’ that solve anything. For some people, it’s coffee. For others, it’s chocolate, a prayer, a favorite song, or a hug.
For me, it’s peanut butter. I’m completely serious. Peanut butter has a way of fixing things. If you don’t believe me, take a look at these cookies.
So when a plain chocolate chip recipe goes horribly wrong, it’s only natural I turn to the peanut butter fix.
Archimedes must have been thinking about these cookies when he stepped into the bath since we both had the same reaction:
“EUREKA!”
Peanut butter aside, these cookies are completely gluten-free, dairy-free, and refined sugar-free.
The hardest part was trying to hide how healthy these goodies were to my pro-junk food taste testers. Usually, when I am so excited about a recipe and am shoving the food in their faces, they tend to get suspicious.
Despite their piqued healthy-food-is-gross bias, they took a bite… and began dancing around Syracuse shrieking, “EUREKA!”
… In truth, they widened their eyes, smiled, and nodded, which is equivalent to the same thing!
The recipe is so easy, it doesn’t take an Archimedes to bake these.

Decadent Peanut Butter Chocolate Chip Cookies
Ingredients:
- 2 cups gluten-free oat flour
- 1 cup chickpea flour
- 1 cup coconut flour
- 1 cup olive oil
- 2/3 cup maple syrup
- 1/3 cup honey
- 3/4 cup natural peanut butter
- 1/2 tsp salt
- 1 tsp baking soda
- 4 tsp vanilla extract
- 1 cup dark chocolate chips
